#01 PRESSING THE GRAPES

Our grapes are harvested and pressed in the same careful manner as in winemaking. The natural juice is then chilled for up to 12 months, ensuring the juice doesn’t ferment.

#02 BUILDING STRUCTURE

Filtered water is added to balance the concentration of the natural fruit sugars. The juice is then blended with natural wine vinegar and rectified grape must to build complexity, body and balance.

#03 Refined Carbonation

Wild Idol’s fermentation-free process means its fine, delicate bubbles are introduced through refined carbonation. Achieving the tiny bubbles for a velvety ‘mousse’ requires the juice to first be chilled then carbonated under high pressure to push more CO2 into the blend, resulting in longer-lasting fizz in the glass.

#04 FILTRATION AND BOTTLING

Sterile filtration ensures the purest blend, before Wild Idol is filled into a premium quality, vintage wine bottles.
